Sweet Potato Chickpea Traybake with Pork Satay and Sauces

   Preheat the oven to 200°C.

   Add sweet potatoes, bell peppers, chickpeas, and onion to a baking tray.

   Drizzle with olive oil and add paprika powder, garlic powder, salt, and pepper. Mix well.

   Roast for 25 to 30 minutes until the vegetables are soft and slightly caramelized, stirring halfway.

   Mix soy sauce, ketjap manis, olive oil, honey, and garlic to make the marinade.

   Add the pork tenderloin strips and coat well. Let marinate for at least 30 minutes.

   Cook the pork in a hot pan for 8 to 10 minutes until cooked through and caramelized.

   Add peanut butter, coconut milk, soy sauce, ketjap manis, honey, garlic, and lemon juice to a saucepan.

   Heat gently while stirring until smooth, then simmer for 2 to 3 minutes.

    Mix greek yoghurt, lemon juice, salt, and parsley in a bowl to make the yogurt sauce.

    Serve the traybake with the pork satay, satay sauce, and yogurt sauce.
