   Spread the leek and smoked salmon evenly over the base.

   Sprinkle the grated cheese over the filling.

   Whisk the eggs with cream, optional milk, salt, and black pepper.

   Pour the egg mixture into the crust.

   Bake for 40–45 minutes until just set and lightly golden.
