Recipe
Preheat the oven to 200°C.
Place the potatoes, carrots, and red onion in a large baking dish.
Drizzle the vegetables with olive oil and season with salt and black pepper.
Mix the Dijon mustard with honey and 1 tbsp olive oil.
Place the chicken drumsticks on top of the vegetables and brush with the honey mustard mixture.
Bake for 45–50 minutes, turning the chicken once, until golden and cooked through.
Serve with the roasted vegetables.
