Oven Pulled Pork with Flatbreads & Quick Slaw

   Preheat the oven to 160°C.

   Optional: sear the pork briefly on both sides and add the garlic for the last 30 seconds. Set aside.

   In the same pan over low heat, sauté the onion and season with smoked paprika, cumin, salt, and black pepper.

   Place the onion in an oven dish and add the pork on top.

   Pour over the chicken stock and cover tightly with foil or a lid.

   Bake for 2½–3 hours, until the pork is very tender.

   Shred the meat with two forks and stir it into the juices.

   For the quick slaw, whisk together the yoghurt, Dijon mustard, apple cider vinegar, lemon juice, lemon zest, honey, olive oil, salt, and black pepper.

   Add the cabbage, red onion, carrots, and apple, then toss well. Add the parsley, chive, celery seeds, and smoked paprika if using. Let sit for 10 minutes.

    Serve the pulled pork with flatbreads, quick slaw, and extra yoghurt.
