Recipe
Add onion, garlic, and red pepper to the slow cooker.
Place the chicken thighs on top.
Add chopped tomatoes, chicken stock, cumin, smoked paprika, salt, and black pepper.
Stir gently to combine.
Cook on LOW for 6 hours or HIGH for 3–4 hours.
Shred the chicken slightly before serving.
Serve the soup topped with tortilla chips and avocado if using.
