Preheat the oven to 200°C.
Place sliced potatoes in a baking dish and toss with olive oil, salt, and black pepper.
Roast the potatoes for 20 minutes.
Add the cod fillets and lemon slices to the dish.
Season the fish with salt and black pepper and drizzle with olive oil.
Bake for another 12–15 minutes until the fish is cooked through.
Add spinach to the dish and let it wilt before serving.
