Sweet Potato Purée Casserole with Seared Veg & Sausages

   Bring a pot of well-salted water to a boil and cook sweet potatoes for 12–15 minutes until very soft.

   Drain well and mash until smooth.

   Season mash with salt, olive oil or butter, and Dijon mustard.

   Add a splash of milk or yogurt if needed and set aside.

   Heat a large pan with olive oil over medium-high heat.

   Brown sausages on all sides for about 5–7 minutes.

   Remove sausages from the pan and slice into thick pieces.

   In the same pan sauté the red onion for about 2 minutes.

   Add broccoli or cauliflower, season with salt and pepper, and cook 4–6 minutes until lightly golden but still firm.

    Preheat the oven to 200°C.

    Combine vegetables and sausage pieces and transfer to an oven dish.

    Spoon the sweet potato purée evenly over the top.

    Sprinkle with grated cheese.

    Bake covered for 15–20 minutes.

    Uncover and bake another 10–15 minutes until bubbling and lightly golden.

    Optional: grill for 2–3 minutes at the end for extra colour.

    Add broccoli, season with salt and black pepper, and cook 4–6 minutes until lightly golden but still firm.
