Slow Cooker Beef Ragu Stew

   Optional: Heat a pan and sear the beef briefly on both sides. Add garlic during the last 30 seconds. Set aside.

   In the same pan over low heat, saute onion, celery, and carrots until softened. Add tomato paste, salt, pepper, oregano, and basil and cook for 2 minutes.

   Transfer the vegetables to the slow cooker and place the beef on top.

   Add chopped tomatoes and beef stock. Stir gently.

   Cook on LOW for 8 hours or HIGH for 4–5 hours.

   Shred or break up the beef before serving.

   Serve with rice and a simple salad of lettuce, cucumber, olive oil, and balsamic vinegar.
