Recipe
Preheat the oven to 200°C.
Place the potatoes, carrots, and red onion on a large baking tray.
Drizzle the vegetables with olive oil, season with salt and black pepper, and toss well.
Place the pork tenderloin on top and rub with olive oil, salt, black pepper, and rosemary.
Roast for 35–40 minutes, turning the pork once during cooking.
Let the pork rest for 5 minutes before slicing.
Serve with the roasted vegetables.
